Savoury Christmas Appetisers

CHristmas Apertizers
Our Christmas menu is ready and it looks good enough to eat! This week we’ll be looking at appetisers for every occasion. Whether you’re a meat lover or a vegetarian, we’ve got ideas to inspire you.

Savoury Show-Stoppers

Tomato, Basil and Bocconcini Skewers – You’ll need:

• 2 punnets cherry tomatoes
• 2 tubs bocconcini
• 1 bunch fresh basil
• Salt and pepper
• Olive oil
• Balsamic vinegar

Slice cherry tomatoes in half and put in a large bowl with drained bocconcini and torn basil leaves. Season with salt and pepper, olive oil and balsamic vinegar. On a toothpick place a bocconcini ball, basil leaf and cherry tomato half. Lay skewers on a plate and serve at a barbeque or Christmas lunch!

Salad Wrap Christmas Tree – You’ll need:

• 1 pack lavash bread warps (or similar)

• 1 cucumber

• 1 capsicum

• 1-2 celery sticks

• 1 carrot

• 1 tomato
• Lettuce leaves

• Mayonnaise

Slice or grate all of the vegetables into a large bowl and toss to combine. Stir through mayonnaise. Lay wraps on a clean surface and arrange lettuce leaves on top (this separates the salad mix from the bread, preventing it from becoming soggy).
Spoon salad mix onto wraps and roll tightly. Cut each wrap into a bite sized portion and arrange on a platter in Christmas tree formation. This recipe can easily be personalised to suit your tastes. Add ham, chicken or any of your favourite vegetables to make it your own!

Mini Pizza Christmas Ornaments – You’ll need:
• Pizza bases

• Pizza sauce

• Basil

• Mozzarella cheese

• Onion and garlic to taste

Use star, tree and snowman cookie cutters to cut shapes out of the bases and spread with pizza sauce. Sprinkle onion, garlic, basil and cheese over the top and bake in a moderate oven until cheese is melted and slightly brown. You can add any other pizza topping you want to these. Some great ideas include ham and pineapple, red and green capsicum, salami or chicken. These are great if you’re having a dinner party and want to get your guests involved – kids love them too!
