What to do with your Christmas leftovers

We are all guilty of over preparing for our Christmas feast. Here are some great ideas to put them to good use in the days after.

1. Piece together a pie -Pie makers are super cheap and super easy. Simply buy some puff pastry fill the pie with your left overs cover in gravy, cheese sauce or cranberry sauce and in 5 minutes you have a flaky golden pie.

2. Flip a fritter – Make a basic batter by beating or whisking up 1 egg, 1 cup of milk and 1 cup of SR flour. Add the meat chopped up onion, shallots, capsicum, parsley and corn plus a little chicken stock and salt and pepper. Shallow fry spoon fulls of the mixture until golden brown. Turn over when the bubbles come to the surface.

3. Seal it for later – Slice your left over ham, pork, turkey or chicken and divide into 500gm lots. Use a cryovac machine to remove the air and seal the packet. Freeze and thaw when you need some cold meat for sandwiches.

4. Heat things up with a curry – Make a basic curry sauce, throw in your chopped up meat to heat and serve with rice
