Left over Turkey? Make a festive Croque-Monsieur

Leftover turkey croque monsieur - Final Touches for Your Christmas Décor

No doubt, we are all very familiar with the practice of eating leftovers for days after the Christmas festivities are over. And why shouldn’t we? We worked so hard to pull it all together in the first place and we definitely don’t want to waste it, but the same meal for days can certainly get a little boring.

Finding creative ways to consume your surplus Christmas food can help to make the process of eating leftovers a bit more interesting. The Croque-Monsieur, a classic French sandwich, is the perfect example. A delicious meal in it’s own right, it is also great for using up leftover Christmas turkey, cranberry sauce and cheese. Mmmmm!

Ingredients:

  • 40 g unsalted butter
  • 40 g plain flour
  • 400 ml milk
  • 2 tablespoons Dijon mustard
  • 100 g Stilton cheese (or similar)
  • 8 slices of white bread
  • cranberry sauce
  • 100 g Gruyère cheese (or similar)
  • 400 g leftover cooked turkey

Instructions:

  1. Preheat the oven to 220ºC.
  2. In a saucepan on a low heat, melt the butter until foamy, but not coloured, then stir in the flour. Cook for 3 minutes. Pour in the cold milk and whisk well to avoid lumps forming.
  3. Raise the heat and leave to simmer for a few minutes. Remove from the heat, stir in the mustard and crumble in the Stilton, and check the seasoning.
  4. Line the bread on the work surface and spread 4 slices with cranberry sauce, then Stilton sauce and grate over half the Swiss cheese.
  5. Top with turkey and sandwich with the remaining bread. Press lightly, then spread the 4 tops with the remaining sauce and finish by grating or chopping over the remaining Swiss.
  6. Bake until the cheese melts and the sandwiches turn golden brown. Serve with a green salad.
