Got a dinner party coming up and you’re looking to finish off the evening with the perfect sweet treat? Take the opportunity to get a head start practicing for December with these delicious desserts, which will be perfect for the Christmas table too!

Orange Glazed Doughnuts with Sugared Rosemary

Ingredients:

Doughnuts

  • 1 cup fresh dates, pitted and chopped
  • ¼ cup boiling water
  • 1 ¼ cups self-raising flour, sifted
  • ¾ cup caster sugar
  • 125g unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 sprigs rosemary
  • ¼ cup white sugar

Orange Icing

  • 2 tbsp orange juice
  • 2 cups icing sugar

Method:

  1. Preheat oven to 160 degrees
  2. In a small bowl, place the dates covered in boiled water and allow to stand for 5 minutes or until softened. Then using a fork, mash the dates until smooth.
  3. Place the flour, caster sugar, eggs, milk, butter, vanilla and the date mixture in large bowl and whisk until smooth.
  4. Spoon half the mixture into a well-greased 6 doughnut pan. Cook for 12-14 minutes or until golden brown and cooked when tested with a skewer.
  5. Turn out doughnuts onto a wire rack to cool. Repeat with remaining batter to make another batch of 12 doughnuts.
  6. While the doughnuts are cooling, scatter the sugar in a plate, dip the rosemary sprigs in hot water and press into the white sugar. Place on a small tray and allow to dry for 30 minutes or until crisp. Trim leaves and set aside.
  7. To make the orange icing, place the orange juice and icing sugar in a medium bowl and whisk until thick and shiny.
  8. Once the doughnuts have cooled, spoon over the icing and decorate with sugared rosemary.
