Rocky Road Recipes to Rock Your World

For me, rocky road is synonymous with Christmas time. Whether it’s enjoying a little (or a lot!) of this sweet treat while celebrating with family and friends or carefully wrapping it to share as gifts, it’s definitely something that I love at this time of year.

One of my favourite things about rocky road is that it comes in so many colour and flavour combinations, and I am constantly discovering more and more rocky road recipes to try. Here are a few of my favourite variations on this festive delight.

White Chocolate and Raspberry Rocky Road

I’m dreaming of a White Chocolate and Raspberry Rocky Road! This rocky road recipe is just perfect for Christmas. The colours of white and red are typically Christmas so it looks, and tastes, amazing.

Prep: 0:15 Mins
Serves: 24 Squares

INGREDIENTS

  • 200g shortbread biscuits, crushed
  • 150g raspberry lollies, quarted
  • 60g mini marshmallows
  • 75g shredded coconut
  • 600g white eating chocolate, melted

METHOD

Step 1
Grease 20cm x 30 cm rectangular pan. Line the base and long sides with baking paper, extending the paper over the sides.

Step 2
Combine biscuits, lollies, marshmallows and 60g of the coconut in large bowl.
Step 3
Stir in the chocolate.

Step 4
Spread mixture into the pan, smooth surface and then sprinkle with the remaining coconut.

Step 5
Put in the fridge for 2 hours or until firm. Cut into squares.

Peanut Butter Banana Rocky Road

There’s nothing better than combining all your sweet-tooth favourites into one overly-indulgent mega-dessert. That’s just what we tend to do at Christmas, right? Cue Peanut Butter Banana Rocky Road. The ultimate flavour sensation.

INGREDIENTS:

  • 100g fudge or caramel candies
  • 70g banana sweets
  • 100g peanut M&Ms (orange, yellow and brown if you like colour co-ordination!)
  • 400g good quality milk chocolate
  • 200g peanut butter chips

METHOD:

  1. Grease 20cm x 30 cm rectangular pan. Line the base and long sides with baking paper, extending the paper over the sides.
  2. Combine biscuits, candy, and fudge in a large bowl.
  3. Melt the milk chocolate in the microwave in 30 second bursts until it has almost all melted.
  4. Add 150g of the peanut butter chips and microwave for another 10 seconds. Stir chocolate until smooth.
  5. Stir the chocolate through the biscuit and candy mix, making sure everything is covered in chocolate.
  6. Spread mixture into the pan, smooth surface and then sprinkle with the remaining peanut butter chips.
  7. Put in the fridge for 2 hours or until firm. Cut into squares.

Caramilk Rocky Road

Wow, just wow! Just when you thought you’d seen almost every rocky road recipe, along comes Caramilk to completely steal the show. This Caramilk Rocky Road is next level AMAZING!! Go ahead and give it a try, you won’t be sorry.

INGREDIENTS:

  • 100g Maltesers
  • 200g Jersey Caramels or fudgeroughly chopped
  • 100g mini marshmallows
  • 1 cup (30g) rice bubbles
  • 400g Caramilk chocolate
  • 25g coconut oil

METHOD

How to – Traditional

  1. Lightly grease a slice pan. Line the base and long sides with baking paper, extending the paper over the sides.
  2. Combine maltesers, caramels, marshmallows and rice bubbles in a large bowl and set aside.
  3. Melt the Caramilk and coconut oil in the microwave in 30 second bursts until completely melted.
  4. Add the Caramilk to the malteser mixture making sure everything is well covered in chocolate.
  5. Spread mixture into the pan, smooth surface and put in the fridge for 2 hours or until firm.
  6. Cut into squares.

How to – Thermomix

  1. Lightly grease a slice pan. Line the base and long sides with baking paper, extending the paper over the sides.
  2. Mix maltesers,aramels, marshmallows and rice bubbles in a large bowl and set aside.
  3. Place Caramilk and coconut oil in TM bowl and blitz for 10 seconds on speed 9.
  4. Scrape down and melt 5 minutes 50 degrees speed 1.
  5. Scrape down and melt for a further 2 minutes at 50 degrees on speed 1.
  6. With blades moving on reverse speed 1, gradually add the lollies through the hole in the lid until they are all coated in chocolate this should take about 45 seconds.
  7.  Spread mixture into the pan, smooth surface and put in the fridge for 2 hours or until firm. Cut into squares.
  8. Make a Caramilk drink by adding a cup of milk and blitzing 5 seconds on speed 8. Then heat milk 5 minutes 80 degrees speed 4.

Festive Rocky Road Rings

If rocky road wasn’t already festive enough, there’s these Festive Rocky Road Rings. There’ll be no mistaking that it’s Christmastime with this delicious combination of colours and flavours on the table.

Prep: 0:15 Mins
Serves
: 9

INGREDIENTS:

  • 1/3 cup mini marshmallows, halved
  • 1/4 cup red and green, M&Ms
  • 1/3 cup dried cranberries
  • 1/4 cup pistachios
  • 400g white eating chocolate, melted

METHOD:

  1.  Grease nine holes of a mini bundt pan well with butter (or oil spray.)
  2. Combine the M&Ms, marshmallows, cranberries, and pistachios in a large bowl.
  3. Stir in the chocolate.
  4. Use two teaspoons to divide the mixture between the prepared moulds, then smooth the tops and then tap the tray on a hard surface to get rid of any air bubbles.
  5. Put in the fridge for at least 2 hours or until firm. To remove the Rocky Road Rings, invert the tray over a chopping board for a few minutes and then using a small palette knife, carefully prise each ring out of the tin.
