Divine Christmas in July Desserts
Apple and Apricot Pie
Give the much-loved apple pie a little twist with the addition of some apricots to the mix.
It's just the thing to warm tummies on a cool winter's day and it'll be right at home on your Christmas in July menu.

INGREDIENTS:
• 2 sheets shortcrust pastry
• 800g can apple pie fruit
• 1 cup dried apricots, chopped
• 2 teaspoons ground cinnamon
• 2 tablespoons white sugar
• 1 egg, lightly beaten
• Icing sugar, to serve
METHOD
Step 1
Preheat oven to 200°C. Grease a 3cm deep, 20cm (base) pie dish. Line dish with 1 sheet of pastry, trimming edges. Place a sheet of baking paper over pastry. Half-fill with uncooked rice. Bake for 10 minutes. Remove baking paper and rice. Bake for a further 10 minutes or until pastry is light golden. Set aside to cool.
Step 2
Combine apple, apricots, cinnamon and 1 tablespoon of sugar. Spoon into pie case. Brush edges of pastry with water.
Step 3
Cut 12×2cm-thick strips from remaining pastry. Arrange in a lattice pattern over pie. Brush with egg. Sprinkle with remaining sugar.
Step 4
Bake for 20 to 25 minutes or until golden. Dust with icing sugar. Serve warm or cold.

- 125g butter, softened
- 3/4 cup caster sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 3 teaspoons red food colouring
- 1 3/4 cups plain flour
- 1/4 cup cocoa powder
- 1 teaspoon bicarbonate of soda
- 1/4 teaspoon baking powder
- 1 teaspoon apple cider vinegar
- 1/2 cup buttermilk
- 75g butter, softened
- 1 1/2 cups icing sugar mixture, sifted
- 1 teaspoon vanilla extract
- 200g cream cheese, softened
