Turkey, Camembert and Cranberry Sausage Scrolls

Roll turkey mince, cranberry and camembert with buttery puff pastry for a quick and easy snack everyone will enjoy.

INGREDIENTS

  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g turkey mince
  • 1/2 cup panko breadcrumbs
  • 100g camembert, finely chopped
  • 1/3 cup cranberry sauce, plus extra to serve
  • 1 tablespoon chopped fresh sage leaves
  • 2 eggs, lightly beaten
  • 4 sheets frozen puff pastry, partially thawed
  • 2 teaspoons sesame seeds
  • 1/4 teaspoon sweet paprika
  • Fresh flat-leaf parsley leaves, to serve

METHOD

Step 1

Heat oil in a small frying pan over medium-high heat. Cook onion, stirring occasionally, for 5 minutes or until softened. Add garlic. Cook for 1 minute. Set aside to cool completely.

Step 2

Preheat oven to 200C/180C fan-forced. Line 3 large baking trays with baking paper.

Step 3

Combine mince, cooled onion mixture, breadcrumbs, camembert, cranberry sauce, sage and 1/2 the egg in a large bowl. Season with salt and pepper.

Step 4

Place 1 pastry sheet on a flat surface. Leaving a 1cm border at top of the sheet, spread 1/4 of the mince mixture over pastry to cover. Starting at the end closest to you, roll up to enclose filling. Brush roll with a little of the remaining egg. Sprinkle with 1/4 of the sesame seeds and paprika. Season.

Step 5

Trim and discard ends of the roll. Cut into 1cm-thick slices. Place, cut-side down, onto prepared trays, leaving room for spreading. Repeat with remaining pastry, mince mixture, egg, sesame seeds, and paprika. Bake, 2 trays at a time, for 20 to 25 minutes or until golden and puffed, and filling is cooked through. Repeat with remaining tray. Stand for 5 minutes. Sprinkle with parsley. Serve with extra cranberry sauce.

Quick Chicken, Cranberry and Brie Canapes

For an easy finger food recipe, you can’t look past these cheesy chicken pastry bites, made from only six ingredients.

INGREDIENTS

  • 1 1/2 sheets frozen puff pastry, just thawed
  • 1 small smoked chicken breast, finely chopped
  • 100g brie, cut into 24 even pieces
  • 100g (1/4 cup) whole cranberry sauce
  • 2 teaspoons fresh thyme leaves
  • 1 tablespoon finely chopped fresh chives

METHOD

Step 1

Preheat the oven to 220C/200C fan forced.

Step 2

Cut the whole pastry sheet into 16 even squares. Cut the half sheet into 8 even squares. Line 1 1/2 tbs (30ml) capacity mini muffin pans with pastry squares (the pastry edges will be higher than the muffin holes). Place in the freezer for 15 minutes to firm.

Step 3

Bake the pastry for 10 minutes or until lightly golden and crisp. Use a spoon to gently press down on the pastry to flatten slightly. Fill each hole with a little of the chicken. Top with a piece of brie and cranberry sauce. Scatter with thyme.

Step 4

Bake for 5-7 minutes or until golden and the cheese has melted slightly. Sprinkle with chives.

Brie, Cranberry and Herb Mini Pull-part Cobs

Easy and cheesy, mini pull-apart cobs with brie and cranberry are a must this festive season.

INGREDIENTS

  • 8 sourdough rolls
  • 400g spreadable cream cheese
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh thyme leaves, plus extra to serve
  • 2 tablespoons chopped fresh sage leaves
  • 2/3 cup whole cranberry sauce
  • 200g double brie, chopped
  • 1 cup grated pizza cheese
  • 2 tablespoons chopped fresh flat-leaf parsley

METHOD

Step 1

Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper.

Step 2

Cut the top of each bread roll at 2cm intervals in a diamond pattern, being careful not to cut the whole way through. Combine cream cheese, garlic, thyme and sage in a bowl. Season with salt and pepper.

Step 3

Spread cream cheese mixture over cut sides of bread. Spoon dollops of cranberry sauce and pieces of brie into cuts. Place on prepared tray. Bake for 15 minutes or until lightly golden. Sprinkle with pizza cheese. Bake for a further 5 minutes or until cheese is golden and bubbling. Sprinkle with extra thyme and parsley. Serve.
