Get into the spirit of Christmas in July by enjoying a fresh crop of festive salads. Just because it’s cold outside doesn’t mean you can’t celebrate Christmas with a salad. A warm winter salad is perfect to enjoy in the cooler months.
Roasted Beetroot – You’ll Need:
- 3 large trimmed and washed beetroot
- 3 sweet potatoes peeled and cut into 4cm thick rounds
- 4 peeled carrots in 4cm lengths
- Olive oil
- Freshly ground white pepper
- Fresh horseradish
- Place the beetroot, sweet potatoes and carrots in a large baking tray and splash with plenty of extra virgin olive oil.
- Season well and roast, turning occasionally at 200C for about 50 minutes or until soft and caramelised.
- Remove the vegetables from the oven and transfer them to a bowl.
- Toss with extra virgin olive oil and red wine vinegar.
- Serve the salad on a platter and grate fresh horseradish over the top.
Warm Potato Salad – You’ll Need:
- 10-12 potatoes
- Olive oil
- Juice from 1-2 lemons
- Sea salt and freshly ground black pepper
- 1 tbsp heaped grain mustard
- ¼ cup chopped chives
- ½ cup Italian parsley picked and washed
- 6-8 slices of bacon grilled until crisp
- Steam potatoes over boiling water
- While still warm, cut in half (use gloves if necessary) and place in large bowl.
- Drizzle over oil and lemon juice. Season well with salt and pepper.
- Set the potatoes aside for a few minutes to allow them to soak up the flavours.
- Stir through the mustard, chives, parsley and bacon. Serve the salad in the bowl.
