The festive season usually calls for a celebratory drink or two. Whether you like Christmas cocktails of the alcoholic variety, or prefer a fruity and refreshing drink without the “secret ingredients” we’ve gathered some delicious beverages you’re sure to enjoy. Quite perfectly, they are all shades of green and red, so not only do they taste amazing, but they look the part too.
Tropical Pineapple Crush
This Tropical Pineapple Crush is the perfect summer holiday treat. Make it a mocktail by swapping the Midori for pureed honeydew melon and replace the Malibu with coconut water.

Serves: 4
INGREDIENTS:
- 1/4 cup (20g) desiccated coconut
- 1 lime wedge
- 1/3 cup (80ml) Midori liqueur
- 1/4 fresh ripe pineapple, peeled, cored, coarsely chopped
- 1 cup (250ml) pineapple juice
- 1/2 cup (125ml) coconut milk
- 1/3 cup (80ml) Malibu liqueur
- 1/4 cup mint leaves
- 1 cup crushed ice
- Pineapple stars, to serve
METHOD
Step 1
Place coconut on a plate. Run the lime wedge around the rims of serving glasses. Dip in coconut to lightly coat. Pour Midori evenly among the glasses.
Step 2
Place the pineapple, pineapple juice, coconut milk, Malibu, mint and ice in the jug of a blender and blend until smooth. Pour over the Midori.
Step 3
Serve with pineapple stars.

Watermelon Pina Colada

Serves: 6
INGREDIENTS:
- 1kg watermelon, peeled, coarsely chopped
- 2 slices watermelon
- 2 slices pineapple
- 500ml coconut sorbet or mango sorbet
- 1 1/2 cups (375ml) pineapple juice
- 2/3 cup (160ml) white coconut rum
- 1/4 cup (60ml) lime juice
METHOD
Step 1
Line a large baking tray with baking paper. Place chopped watermelon in a single layer on the lined tray. Place in the freezer for 2 hours or until frozen.
Step 2
Use small star cutters to cut shapes from the watermelon slices and pineapple slices. Thread fruit stars onto small skewers.
Step 3
Place frozen watermelon, sorbet, pineapple juice, rum and lime juice in a blender. Blend until smooth.
Step 4
Pour pina colada among serving glasses. Serve with fruit skewers.

Cucumber and Lemon Iced Tea Cooler
Looking for a drink that is delightfully refreshing on a warm December day? Enjoy this cucumber and lemon iced tea cooler.

INGREDIENTS:
- 1 (150g) Lebanese cucumber, trimmed
- 2 x 350ml Zesty Lemon Iced Tea, chilled
- 1/4 cup fresh mint leaves
- 2 teaspoons caster sugar
- Ice cubes for serving, optional
- Thin lemon slices, for serving, optional
- Baby cucumber slices, for serving, optional
METHOD
Step 1
Cut the cucumber into four, place in a plastic bag and freeze for 2-3 hours or until frozen.
Step 2
Place frozen cucumber and iced tea in a high powered blender. Process 1-2 minutes until smooth.
Step 3
Finely chop mint and combine with sugar in a bowl.
Step 4
Divide some ice between serving glasses. Top with tea mixture. Add some lemon and cucumber slices and scatter with the mint sugar to serve.

INGREDIENTS:
- 2 cups fresh raspberries or frozen (thawed) raspberries, plus extra to serve
- 1/2 cup caster sugar
- 1 vanilla bean, split
- 1 1/2 cups chilled cranberry juice
- 3 cups chilled soda water
- Ice-cubes, to serve
METHOD
Step 1
Using a blender, blend raspberries and sugar together until smooth. Strain through a fine sieve over a large jug.
Step 2
Add vanilla bean, cranberry juice, and soda water. Stir to combine. Serve with ice-cubes and extra raspberries.
