Granted, a majority of the Christmas focus and festivities is centred around the kids. But that doesn’t mean us adults can’t have a little fun and celebration of our own. We’ve certainly earned ourselves a little treat come Christmas Day! Whether you prefer warm and comforting or cool and refreshing, these fun and festive drinks that are just for the adults are sure to have you feeling jolly.

Caramel and Apple Hot Toddy with Cinnamon

It’s like apple pie in a cup! This Caramel and Apple Hot Toddy with Cinnamon is a perfectly festive beverage.

INGREDIENTS:

  • 2/3 cup (150g) caster sugar
  • 2/3 cup (165ml) apple juice
  • 4 cinnamon quills
  • 2/3 cup (165ml) apple pie liqueur (we used Moreau brand – substitute Calvados)
  • Whipped cream, to serve
  • Ground cinnamon, to dust

METHOD

  1. Place sugar in a medium heavy-based saucepan over high heat with 1 tbs of water. Cook, swirling pan, for 5-6 minutes or until golden and caramel. Using a metal spoon (and being mindful of the steam), stir in 2 cups (500ml) water and swirl pan until caramel and water are combined. Stir in apple juice and cinnamon quills, then stir in the liqueur.
  2. Divide among glasses, spoon over whipped cream and dust with cinnamon to serve.

Maurice Terzini’s Liquid Tiramisu

Well, it seems that turning popular desserts into delicious drinks doesn’t end at apple pies. There’s no doubt that this Liquid Tiramisu is an incredibly indulgent treat for any time of the year, but if you’re looking for something extra special to really impress at your Christmas function, then this is definitely the ticket.

INGREDIENTS:

  • 1/4 cup (60ml) Napoleon brandy
  • 1/4 cup (60ml) creme de cacao
  • 2 tbs each Kahlua and Marsala
  • 2 tbs espresso coffee
  • 1/3 cup (85g) mascarpone

CINNAMON CRUMBLE

  • 1/2 cup (45g) rolled oats
  • 1/4 cup (60g) brown sugar
  • 1/4 tsp baking powder
  • 1/4 tsp pink salt
  • 1/2 tsp ground cinnamon
  • 30g cold unsalted butter, chopped
  • 1/2 eggwhite

METHOD

  1. Preheat oven to 160°C. For the crumble, combine oats, sugar, baking powder, salt and cinnamon in a bowl. Rub butter in with your fingers until it resembles breadcrumbs. Stir in eggwhite. Spread mixture thinly onto a baking paper-lined baking tray. Bake for 10 minutes or until dark golden. Cool. Whiz in a food processor to a fine crumb.
  2. Divide the brandy, creme de cacao, Kahlua, Marsala, coffee and mascarpone between two cocktail shakers filled with ice. Shake each until combined. Divide among six 150ml glasses. Sprinkle with cinnamon crumble to serve.

Pink Gin and Tonic

Pink gin is becoming increasingly popular and is refreshing beverage choice, especially in the warm summer months. Leave the pre-made versions on the shelf and create your very own prettily pink gin and tonic.

METHOD:

  • 1 cup (250ml) gin
  • 1 cup (250ml) sweetened cranberry juice
  • 1 cup (250ml) rose wine
  • 2-3 lemons, thinly sliced
  • 1 cup (250ml) tonic water

METHOD

  1. Fill a serving jug with ice cubes. Pour in the gin, cranberry juice and rose, then stir well to combine. Slip in as many lemon slices as desired and top up with tonic water.
  2. Pour pink gin and tonic into chilled glasses and serve immediately.

Watermelon Spritz

Desserts aren’t the only things that transfer well to a beverage. This refreshing Watermelon Spritz with a mint, feta and olive garnish has you drinking a delicious summer salad (with a sprinkle of vodka of course)!

Serves: 10

INGREDIENTS:

  • 5lt of freshly squeezed watermelon juice; from 3kg of watermelon
  • 6 green limes, cut into quarters.
  • 300ml chilled vodka
  • 1lt soda
  • 10 sprigs of mint
  • 30 pitted olives
  • 100g of fetta, cut into 20 cubes
  • Ice

METHOD

  1. Squeeze all the limes bar two quarters into a large jug. Top with the watermelon juice and give it a good stir. Place in the fridge until the guests arrive. Chill the glasses.
  2. Just before the guests arrive, run the remaining lime quarters around the rim of each chilled glass Add the vodka to the watermelon juice and stir. Fill each glass with ice and the pour over the watermelon taking care to restrain the lime wedges from dropping into each glass. Using a sieve or a wooden spoon to help you achieve this. (Add the wedges if you want their green in the glass).
  3. Garnish with a little plume of mint and a skewer of olives and two cubes of fetta.
